Oyster Plumps

  • Natural Oysters… Pacific blacklip are fatter
  • Stones Green Ginger Wine
  • Lime Juice
  • Garlic Chives

Sautee finely chopped Chives in Ginger Wine and lime juice then drop hot into upright shells. The oyster becomes warm and takes the edge off for those who do not like the taste of straight natural Oysters

Chilli Prawns

Buy IQF Prawn Cutlets 21/25 in 1Kg Frozen Packs
Saigon Sauce

Combine prawns and sauce in a marinade and leave overnight.

Put on oven tray at 200c for 4 minutes

Serve with cocktail sticks

Saigon Sauce

Process:

  • 6 Red Chillies de-seeded
  • 1 Red Capsicum
  • 3 Cloves Garlic
  • 250 ml Peanut oil
  • 250 ml lime juice
  • 25 gm palm sugar
  • 20 ml Mai Pranon or nam pla fish sauce
  • 20ml Ketchap manis or dark soy
  • 500ml white Vinegar
